Carrot & Spinach Muffins

These muffins are the easiest way to get my toddler to eat vegetables. They are delicious for adults too. A savory fluffy muffin.

Convert: Double | Half | Original
1 teaspoonbaking powder
1 teaspoonbaking soda
4 carrots
2 teaspooncinnamon
2 eggs
0.33333 cupfrozen spinach
0.25 teaspoonnutmeg
0.5 cupoil
0.25 cupraisins (optional)
0.5 cupsugar
0.5 cupwhite flour
0.5 cupwhole wheat flour


Directions:

Step 1
mix together all the dry ingredients
Step 2
Grate the carrots in a food processor. Mash the spinach through as well so it's chopped up finely.
Step 3
Beat the eggs with a fork and add the oil.
Step 4
Mix the egg mixture into the dry mixture.
Step 5
Fold in the grated carrots, spinach, and raisins if using.
Step 6
Pour into oiled mini-muffin tin
Step 7
Bake for 20-25 minutes at 350F.
