Curry Chicken with Rice and Veggies

2 chicken breasts (skinless boneless)
2 cupcooked rice
2 clovescrushed garlic
4 teaspooncurry powder
1.25 teaspoonfinely chopped ginger
2 cupfrozen mixed vegetables
2.5 teaspoonlemon juice
2 tablespoonoil
1 red onion
1 pinchsalt
1 largetomato, finely chopped
6 tablespoonwater
6 tablespoonyogurt


Directions:

Step 1
Start cooking the rice.
Step 2
Cut the chicken into cubes and cook on the stove. If you want to save on the number of dishes, cook until brown then set aside. If you want to save on time, then get out a second frying pan and let the chicken cook while continuing.
Step 3
Fry onion, garlic and ginger in the oil until the onions are brown.
Step 4
Reduce heat to low and add curry and 1 tbsp of water. Fry for 4 minutes whlie stirring.
Step 5
Stir in the tomatoes, yogurt, frozen veggies and salt. Add the chicken and remaining water. Bring to a boil and reduce heat and simmer for 20 min.
Step 6
Add the lemon juice and mix in the rice. Let it cook for a couple more minutes while mixing everything in.
