1 egg
2 egg yolks
2 tablespoonoil
1 teaspoonsalt
0.25 cupsugar
0.5 cupwater
0.25 cupwater
3 tablespoonwhite flour
1.75 cupwhite flour
1 cupwhole wheat flour
1.25 teaspoonyeast


Directions:

Step 1
Mix 1/2 cup of water with 3 tbsp of white flour. Microwave it for about 80 sec, whisking every 20 seconds, until it's thick and pasty
Step 2
Move the paste into a stand mixer. Add 1 whole egg + 2 egg yolks, 1/4 cup water, and 2 tbsp oil. Whisk it together so it cools a bit, then add the flour (2 3/4 cups total) and 1 1/4 tsp yeast. Mix for 3-4 minutes
Step 3
Let the dough rest for about 20 mins
Step 4
Add 1/4 cup sugar and 1 tsp salt. Mix for 9 mins until smooth & elastic. Then let it rest in a bowl until it doubles in size, approx 90 mins
Step 5
Cut the dough into 4 equal pieces, and roll into strips about 16-20 inches long. Arrange like a clock, and braid them like this: 12 -> 5 6 -> 12 9 -> 4 3 -> 8 Then straighten them out. When you're done, move to parchment paper on a cookie sheet and wait 3 hours for it to rise. Mix 1 egg and brush over the bread, then bake at 350 for 35-40 mins.
