Silky Chocolate Cheesecake

Amazingly rich, yet (relatively) low fat chocolate cheesecake. It's baked, but should actually be done a day ahead for best results. Perfect for entertaining.

12 chocolate wafer cookies
1 egg
1 cup1% cottage cheese
0.25 cupamaretto or other liqueur (optional)
2 tablespoonchocolate chips
0.25 cupflour
16 ouncelight cream cheese
0.25 teaspoonsalt
1 cupsugar
0.33333 cupunsweetened cocoa powder
1 teaspoonvanilla


Directions:

Step 1
Using food processor, grind chocolate wafers to crumbs. Pat crumbs into 7 inch springform pan on bottom.
Step 2
Add all of the remaining ingredients, except egg and chocolate chips, to food processor. Whirl until very smooth. Add egg. Whirl til mixed. Add chocolate chips and fold in using spatula rather than processor. Pour over chocolate wafer crumbs.
Step 3
Bake at 300 degrees F for 65-70 mins. Cool in pan on wire rack. Cover and chill at least 8 hours or overnight. Remove from pan. Garnish with chocolate curls, or sprinkle icing sugar on top, if desired.
 

Notes:

A food processor is essential for best results. Using a mixer or mixing by hand will just not get you the creamy, smooth texture that is so good. There are approximately 200 calories per serving.
