Tofu and Spinach Lasagna
Good if you like spinach and tofu.
Servings: 3-4
Ingredients:

		| 0.5 cup | feta cheese | 
| 1 package | frozen spinach | 
| 3 cloves | garlic | 
| 0.5 package | instant lasagna noodles | 
| 2 tablespoon | italian-style seasoning | 
| 1.5 cup | mozzarella cheese | 
| 5 large | mushrooms | 
| 1 tablespoon | oil | 
| 0.5 package | soft tofu | 
| 1 can | tomatoe puree | 
Directions:
	
			Preheat oven to 350 degrees F.
			
	
			In a large skillet, saute garlic and mushrooms in oil. Add all the tomatoe puree to mushrooms and garlic, cook 2 to 3 minutes.
			
	
			Combine spinach, italian seasoning, tofu and feta cheese in a seperate bowl. Blend with a fork until the mixture is an even consistency. Heat in the microwave on high for 2 minutes.
			
	
			Combine noodles, cheese, sauce and spinach together in a 9x9 inch baking pan.
