Better Butter

Better Butter is a way of turning one pound of butter into 1.75 pounds of butter, improving the nutritional value, decreasing the calories, and leaving the taste of butter entirely unchanged. Canola oil, when added, decreasesthe saturated fat content, but is tasteless. Water is also added, does not change the taste, but decreases the no. of calories per serving. A mixture of flax seed and canola oil can be used; in which case you are also increasing the amoung of Omega 3 oils found in the end product. Perfect for everyday use, or for use in a frying pan, it is not recommended for baking.

Ingredients:

1 poundbutter
1 cupcanola oil or .75 of canola oil and .25 of flax seed oil
1 teaspoonliquid lecithin
1 cupwater

Directions:

Step 1
You MUST use a food processor for Better Butter. I've had no success with blenders. Add 1 cup of oil (either all canola or a mix of canola/flax seed oil). Do not use more than .25 cup of the flax oil as it is strongly flavored and will affect the taste of the finished product. Add lecithin. Can use from broken capsules or just liquid, if you can find it. Blend until well incorporated, approx 20-30 secs.
Step 2
Add one cup of water. Blend an additional 40-60 seconds til well blended.
Step 3
Add one pound of softened butter. Mix until well blended: approx 1-2 mins.
Step 4
Pour into reusable containers. Butter keeps for at least 4 weeks in the fridge; although I often do 4 lbs at a time, make 8 containers, and freeze them. Keep butter in the fridge when using. Ingredients MUST be added in the order given.
