Chicken Curry Stew with Coconut Milk

Easy to make, and delicious.

Servings: 6

Ingredients:

1 cupcoconut milk
1 tablespooncumin
0.25 candiced tomatoes
1 cupfat-free, reduced-sodium chicken broth
2 cupfrozen baby lima beans
1 cuphalved baby carrots
1 teaspoonhot sauce (such as tabasco)
1 cuppeeled potatoes, cut in 1-inch chunks
1 poundskinless, boneless chicken breast, cut into bite-sized chunks
1 tablespoonyellow curry powder
1 mediumyellow onion, chopped or sliced

Directions:

Put all ingredients in crockpot on low.
