Sesame Ginger Chicken Stirfry

An easy to make dinner that still tastes good when reheated the next day. Can be made without creating many dishes. The cook/prep time can be reduced greatly if you cook extra chicken and keep it frozen. Then you can skip step 2 which can take a while.

Servings: 4 adults

Ingredients:

1 cupbeansprouts
4 largecarrots
5 stalkscelery
1 cupchopped broccoli (frozen ok)
1 cupchopped cauliflour (frozen ok)
1 cupchopped peppers (frozen ok)
1.125 cupdry brown rice
0.5 teaspoonoil
300 gramskinless boneless chicken breast
1 small cansliced water chestnuts
177 millilitrestir fry sauce (Renee's Sesame Ginger Teriyaki Suace)
1 largezucchini

Directions:

Step 1
Start cooking the rice. Can be done easily with a rice cooker.
Step 2
Chop chicken into 1 cm cube pieces. Fry chicken with the oil in a frying pan until brown. Set aside.
Step 3
Chop peeled carrots and celery into 1/2 cm slices. Start cooking in the frying pan.
Step 4
Chop the brocolli, cauliflour, and peppers if needed. Chop the zuchinni into small chunks. Once the carrots and celery are soft, add the remaining vegetables including the water chestnuts and washed beansprouts to the frying pan.
Step 5
Once the vegetables have cooked. Add the cooked chicken and rice to the frying pan. Top with stir fry sauce and mix it all in. Let it cook until the sauce starts to bubble.
