Minestrone Soup

NO pasta or rice in the soup, just vegetables!

Ingredients:

3 largecarrots
3 stickscelery
5 clovesgarlic, minced
3 largeonions
3 tablespoonoregano
2 cupparsley, chopped (fresh)
1 teaspoonpepper
2 largepotatoes
1 canred kidney beans
2 canstomatoe paste
1 canvegetable broth
4 cupwater
1 largezucchini

Directions:

Step 1
Rinse the red kidney beans.
Step 2
Cut and combine all the vegetables, beans and seasonings.
Step 3
Bring to a boil then lower the heat to LOW and cook for over an hour.
